A little while back I was craving a salty sweet treat, it needed to be quick and hit the salty sweet mark. All I had in my pantry were Ritz crackers, marshmallows and chocolate chips. I figured a Ritz smore was exactly wat I needed. They were so good and easy to make, but I couldn't stop imagining them as a cookie so a cookie was created. These gorgeous buttery cookies are stuffed with a full marshmallow with loads of Ritz Crackers in the batter. This adds a lovely crunch to the cookie but not too much as the crackers themselves are buttery and flakey. Such a fun rendition of the Ritz smore.

For this recipe I wanted the batter to have depth of flavor and not loose the taste of the Ritz cracker. This super simple hack of adding in 1 TBSP of powdered (butter)milk makes a huge difference. Its not absolutely necessary for the bake but adds just a slight zing to the cookie.


When adding everything in for this cookie I like to mix in the crushed Ritz before the dry ingredients go in. So, cream your butter and sugar, add the eggs, milk and vanilla and then mix in the crackers. Once everything is fully combined you can toss in dry ingredients and finish off with your favorite chocolate chips. I really like having the mix of milk and semi sweet chocolate chips.

Ritz Smore Cookie Ingredients:

  • 2 c flour

  • 1 tsp salt

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 TBSP powdered (butter)milk optional

  • 1 c butter (melted)

  • 1 c brown sugar

  • 1/2 c granulated sugar

  • 1 egg

  • 2 egg yolks

  • 1 tsp milk

  • 2 tsp vanilla

  • 1 and a half sleeves of Ritz crackers crushed and more for topping

  • 1 heaping cup of chocolate chips

  • marshmallows


Method:


Start by adding your sugars and butter to a large bowl or stand mixer. Beat together till smooth, add in your powdered buttermilk and eggs. Cream together till light and fluffy. Add in milk and vanilla cream again just till combined. At this point add in your crushed Ritz crackers to the batter and give that a good mix.

At this point you add in your dry ingredients and chocolate chips. Mix all together till fully combined. Scoop dough out into a 2 oz. ball, flatten into a disk and add a large marshmallow to the center. Then ball dough up around the marshmallow and set on a baking sheet to chill in the fridge for 1 hour. Bake 6 cookies at a time at 350°F for 10 minutes.
