White Chocolate Strawberry Blondies

Sweet, rich and perfectly tart. Great treat for spring gatherings




It's been a while since I had time to create a new recipe. Between packing up our old house and moving to a new one as well as everyday life and taking care of two little ones my days have ended in complete exhaustion. But now I am back at it and SO excited to be doing so.

On my Instagram page I often ask what people want to see. Feeling a huge creativity block I asked if there was a specific treat people wanted to see. Someone answered a gluten free treat. for whatever reason when I read that I saw these strawberry blondies and knew I had to try my hand at them.


I, myself am not gluten free but love the way it's becoming more common place and easily available to those that are. I also love the texture gluten free flours add to baked goods. The best cross over flour I have found is Bob's Red Mill 1 for 1 flour.


If you wish to make these blondies but don't want them to be GF just simply use same measurements of your favorite AP flour.


For me, the perfect baked good has exciting textures, has a subtle sweet element and perfect contrasting flavors. These blondies hit all the marks. Crispy crust, fudgy center, sweet/tart flavor of the strawberries and smooth sweetness of the white chocolate. Truly a perfect bake for spring


So now to the recipe.




White Chocolate Strawberry Blondies


- 1/4 c granulated sugar

- 3/4 c brown sugar

- 1/3 c Melted butter

- 2 1/2 TBSP veg. oil

- 3.5 oz. white chocolate melted

- 1 1/4 c flour (AP or 1 for 1 GF flour)

- 1 egg

- 1 egg yolk

- 1 1/2 tsp vanilla

- 3/4 tsp salt

- 2 TBSP powdered milk (optional, adds flavor)

- 1/4 c strawberries fresh or freeze dried

- 1.5 oz. white chocolate chips

1/4 c chopped macadamia nuts if desired


Process:

Preheat oven to 350°F

Start by whisking together sugars and eggs. This process of whipping together your eggs and sugar allows for that craggly top we all love in brownies and blondies. Mix together using a whisk or blender for three minutes. The mixture will turn a pale color when this happens add in melted butter, oil and vanilla. Mix just till combined then add in 3.5 oz. melted white chocolate (melt in microwave for 30 second intervals till smooth) and mix again. Now add in flour, salt and powdered milk directly into white chocolate mixture. Mix till combined and now flour is visible. Next fold in your strawberries and white chocolate (as well as nuts if you are adding them). Once your add ins are distributed throughout the dough you can dump into a greased 8x8 pan. bake for 30 minutes. center will still be loose but set. if you stick a tooth pick in it should come out with a fudgy consistency. let set on the counter for 10 minutes before slicing into. Then enjoy!
